Ingredients
- 1 cup red lentils, rinsed
- 2 cups water
- 1 medium sweet potato, peeled and grated
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- ½ tsp turmeric
- ½ tsp smoked paprika
- 2 tbsp fresh parsley or cilantro, chopped
- ½ cup breadcrumbs (or oat flour for gluten-free)
- Salt & pepper, to taste
- Olive oil, for frying
Instructions
- In a pot, boil lentils in water for 10–12 minutes until soft but not mushy. Drain well.
- In a large bowl, combine lentils, grated sweet potato, onion, garlic, cumin, turmeric, paprika, parsley, breadcrumbs, salt, and pepper.
- Mix well and form into small patties.
- Heat olive oil in a non-stick pan over medium heat.
- Fry patties for 3–4 minutes per side until golden and crisp.
