Spiced Lentil & Sweet Potato Cakes 🥔✨

These Spiced Lentil & Sweet Potato Cakes are golden, crispy on the outside, and soft on the inside — packed with warmth from aromatic spices. They’re not just tasty; they’re healthy, satisfying, and perfect for a light lunch, snack, or even a quick dinner.


Ingredients

  • 1 cup red lentils, rinsed
  • 2 cups water
  • 1 medium sweet potato, peeled and grated
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • ½ tsp turmeric
  • ½ tsp smoked paprika
  • 2 tbsp fresh parsley or cilantro, chopped
  • ½ cup breadcrumbs (or oat flour for gluten-free)
  • Salt & pepper, to taste
  • Olive oil, for frying

Instructions

  1. In a pot, boil lentils in water for 10–12 minutes until soft but not mushy. Drain well.
  2. In a large bowl, combine lentils, grated sweet potato, onion, garlic, cumin, turmeric, paprika, parsley, breadcrumbs, salt, and pepper.
  3. Mix well and form into small patties.
  4. Heat olive oil in a non-stick pan over medium heat.
  5. Fry patties for 3–4 minutes per side until golden and crisp.
  6. Serve warm with yogurt dip or a fresh green salad.

  • Tuck into a soft bun for a wholesome veggie burger.
  • Serve as a party appetizer with tahini sauce.
