🥘 Ingredients (4 servings)
- 300g pasta (penne, spaghetti, or fettuccine)
- 2 tbsp olive oil
- 2 chicken breasts, sliced into strips
- 3 cloves garlic, minced
- 200g fresh spinach
- 250ml heavy cream
- 50g grated Parmesan cheese
- ½ tsp dried Italian herbs (or oregano + basil mix)
- Salt & pepper to taste
👩🍳 Instructions
- Cook the pasta
- In a large pot of salted boiling water, cook pasta according to package instructions. Drain and set aside.
- Cook the chicken
- Heat olive oil in a large pan over medium heat.
- Add chicken strips, season with salt, pepper, and herbs.
- Cook until golden and fully cooked (about 5–7 minutes). Remove and set aside.
- Make the creamy sauce
- In the same pan, add a little more oil if needed.
- Sauté garlic for 1 minute until fragrant.
- Pour in the cream, reduce heat, and stir in Parmesan cheese until melted.
- Add spinach and chicken
- Stir in spinach until just wilted.
- Return chicken to the pan and toss everything together.
- Combine with pasta
- Add the cooked pasta to the sauce and mix well until coated.
- Serve
- Plate hot, sprinkle extra Parmesan, and enjoy with crusty bread.
