🛒 Ingredients
For the Salmon
4 salmon fillets
2 tablespoons olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 teaspoon paprika
1 teaspoon dried oregano
Salt and freshly ground black pepper
Fresh parsley for garnish
For the Summer Salad
1 ripe mango, diced
2 ripe avocados, diced
1 cucumber, sliced
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
Fresh cilantro or basil
Juice of 1 lime
2 tablespoons extra virgin olive oil
Salt and black pepper
👨‍🍳 Method
Marinate the salmon with olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper for 20 minutes.
Grill the salmon for 4–5 minutes on each side until perfectly cooked with a lightly charred finish.
Combine all the salad ingredients in a large bowl and gently toss with lime juice, olive oil, salt, and pepper.
