Beef Stroganoff with Creamy Mushroom Sauce

- 500g beef sirloin or tenderloin, cut into thin strips
- 2 tablespoons olive oil
- 1 onion, finely sliced
- 250g mushrooms, sliced
- 2 garlic cloves, minced
- 2 tablespoons flour
- 1 cup beef broth
- 1 tablespoon Dijon mustard
- 200ml sour cream (or crème fraîche)
- 1 tablespoon Worcestershire sauce
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Cooked egg noodles, rice, or mashed potatoes for serving
Instructions
- Prepare the beef – Season strips of beef with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat and quickly sear the beef until browned. Remove and set aside.
- Cook the vegetables – In the same pan, add the remaining oil, sauté onions until soft, then add mushrooms and garlic. Cook until golden.
- Make the sauce – Sprinkle flour over the mushrooms, stir well, then slowly add the beef broth. Whisk until smooth. Stir in Dijon mustard, Worcestershire sauce, and let simmer for 5 minutes.
- Add the creaminess – Lower the heat and stir in the sour cream. Return the beef to the pan and cook gently until heated through. Adjust seasoning.
