Beef Stroganoff with Creamy Mushroom Sauce

Tender strips of beef, simmered in a velvety mushroom and onion sauce, create a hearty and comforting meal perfect for family dinners.

Ingredients

  • 500g beef sirloin or tenderloin, cut into thin strips
  • 2 tablespoons olive oil
  • 1 onion, finely sliced
  • 250g mushrooms, sliced
  • 2 garlic cloves, minced
  • 2 tablespoons flour
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 200ml sour cream (or crème fraîche)
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles, rice, or mashed potatoes for serving

Instructions

  1. Prepare the beef – Season strips of beef with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat and quickly sear the beef until browned. Remove and set aside.
  2. Cook the vegetables – In the same pan, add the remaining oil, sauté onions until soft, then add mushrooms and garlic. Cook until golden.
  3. Make the sauce – Sprinkle flour over the mushrooms, stir well, then slowly add the beef broth. Whisk until smooth. Stir in Dijon mustard, Worcestershire sauce, and let simmer for 5 minutes.
  4. Add the creaminess – Lower the heat and stir in the sour cream. Return the beef to the pan and cook gently until heated through. Adjust seasoning.
  5. Serve – Garnish with fresh parsley and serve hot over egg noodles, rice, or creamy mashed potatoes.
