🌱 Chana Masala (Indian Chickpea Curry)

When it comes to wholesome vegetarian dishes, Chana Masala stands out as a true favorite from Indian cuisine. Ingredients:

  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green chilies, slit (optional, for heat)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp chili powder (adjust to taste)
  • 400 g canned tomatoes, pureed
  • 2 cans (800 g) chickpeas, drained and rinsed
  • 250 ml water or vegetable stock
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon wedges (for serving)

Preparation Steps:

  1. Sauté the Base
    Heat oil in a large pan. Add the onions and cook until golden brown. Stir in the garlic, ginger, and green chilies, cooking for 1–2 minutes until fragrant.
  2. Add the Spices
    Mix in cumin, coriander, turmeric, chili powder, and garam masala. Stir well to release the aroma of the spices.
  3. Build the Sauce
    Add the pureed tomatoes and cook for about 10 minutes until the sauce thickens and the oil starts to separate.
  4. Simmer the Curry
    Add chickpeas and water (or stock). Stir well, then simmer gently for 20 minutes, allowing the flavors to blend together.
  5. Finish and Serve
    Season with salt, garnish with fresh coriander, and serve with lemon wedges on the side.

Serving Suggestion

Chana Masala is best enjoyed with fluffy basmati rice, soft naan, or roti. It can also be served as part of a larger Indian meal, alongside other vegetarian favorites.
