🥗 Mediterranean Lentil & Vegetable Stew
This hearty vegetarian stew is inspired by Mediterranean flavors. Packed with protein-rich lentils, colorful vegetables, and aromatic herbs, it’s both nourishing and delicious — a perfect balance to a meaty dish like Ragoût de Bœuf.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 zucchini, diced
- 1 red bell pepper, chopped
- 200g (1 cup) dried green or brown lentils, rinsed
- 1 can (400g/14 oz) diced tomatoes
- 750ml (3 cups) vegetable broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt & black pepper, to taste
- Fresh parsley or basil, for garnish
Instructions
- Heat olive oil in a large pot. Add onion and garlic, sauté until fragrant.
- Add carrots, zucchini, and bell pepper. Cook for 5 minutes, stirring occasionally.
- Stir in lentils, tomatoes, and vegetable broth. Season with cumin, paprika, oregano, salt, and black pepper.
- Bring to a boil, then reduce heat and let simmer for 30–35 minutes until lentils are tender.
- Adjust seasoning if needed. Garnish with parsley or basil before serving.
