🥗 Mediterranean Lentil & Vegetable Stew

This hearty vegetarian stew is inspired by Mediterranean flavors. Packed with protein-rich lentils, colorful vegetables, and aromatic herbs, it’s both nourishing and delicious — a perfect balance to a meaty dish like Ragoût de Bœuf.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 1 zucchini, diced
  • 1 red bell pepper, chopped
  • 200g (1 cup) dried green or brown lentils, rinsed
  • 1 can (400g/14 oz) diced tomatoes
  • 750ml (3 cups) vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & black pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions

  1. Heat olive oil in a large pot. Add onion and garlic, sauté until fragrant.
  2. Add carrots, zucchini, and bell pepper. Cook for 5 minutes, stirring occasionally.
  3. Stir in lentils, tomatoes, and vegetable broth. Season with cumin, paprika, oregano, salt, and black pepper.
  4. Bring to a boil, then reduce heat and let simmer for 30–35 minutes until lentils are tender.
  5. Adjust seasoning if needed. Garnish with parsley or basil before serving.

Serving Suggestion

Enjoy this stew with warm pita bread, couscous, or a simple green salad.

Tip: Add a squeeze of fresh lemon juice before serving for extra brightness.
