🥘 Spicy Chickpea & Spinach Stew

Ingredients (Serves 4)

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili flakes (optional, for heat)
  • 1 can (400g) chopped tomatoes
  • 2 cans (400g each) chickpeas, drained and rinsed
  • 2 cups fresh spinach leaves
  • 1 cup vegetable broth
  • Salt and freshly ground black pepper, to taste
  • Fresh coriander, chopped (for garnish)

Instructions

  1. Sauté the Aromatics
    In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  2. Add the Spices
    Sprinkle in the cumin, smoked paprika, and chili flakes. Stir well to coat the onions and release the spices’ aroma, cooking for about 1 minute.
  3. Build the Stew Base
    Pour in the chopped tomatoes and vegetable broth. Stir to combine, then add the chickpeas. Reduce the heat and let the stew simmer for 15–20 minutes, allowing the flavors to meld.
  4. Add the Spinach
    Stir in the fresh spinach leaves and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.
  5. Serve
    Ladle the stew into bowls, garnish with fresh coriander, and serve with warm bread or steamed rice.

Chef’s Tip

For an extra burst of freshness, squeeze a little lemon juice over the stew just before serving.
