Ingredients (Serves 4)
- 250g halloumi cheese, sliced into 1cm thick pieces
- 1 medium zucchini, sliced into rounds
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 small eggplant, sliced into rounds
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt & pepper to taste
For the Lemon-Herb Dressing:
- 3 tbsp olive oil
- Juice of 1 lemon
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh mint, finely chopped
- 1 tsp honey or maple syrup
Instructions
1️⃣ Prepare the Vegetables
Place zucchini, peppers, and eggplant in a bowl. Drizzle with olive oil, sprinkle with oregano, salt, and pepper. Toss to coat evenly.
2️⃣ Grill the Veggies
Preheat a grill pan or barbecue to medium heat. Grill vegetables 3–4 minutes per side until tender and lightly charred. Transfer to a serving platter.
3️⃣ Grill the Halloumi
Grill halloumi slices for about 1–2 minutes per side until golden with grill marks.
4️⃣ Make the Dressing
In a small bowl, whisk together olive oil, lemon juice, parsley, mint, and honey/maple syrup.
5️⃣ Assemble & Serve
Arrange grilled halloumi and veggies on a platter. Drizzle with dressing just before serving.
