🌱 Creamy Spinach & Mushroom Pasta – Comfort in Every Bite
Introduction:
This creamy spinach and mushroom pasta is rich, satisfying, and quick to prepare — perfect for a weekday dinner or a special weekend meal. With earthy mushrooms, fresh spinach, and a velvety sauce, it’s a vegetarian dish that tastes luxurious but is surprisingly easy to make.
Ingredients:
- 250 g (9 oz) pasta (penne or fettuccine work well)
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 200 g (7 oz) mushrooms, sliced (button or cremini)
- 150 g (5 oz) fresh spinach leaves
- 200 ml (¾ cup) heavy cream or plant-based cream
- 50 g (½ cup) grated Parmesan or vegan cheese alternative
- ½ tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the pasta in salted boiling water according to package directions. Drain, reserving ½ cup of pasta water.
- Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
- Add mushrooms and cook until golden brown, about 5–7 minutes.
- Stir in spinach and cook until wilted.
- Make the sauce: Lower heat, pour in cream, and stir in oregano and cheese. Simmer for 3–4 minutes.
- Add the cooked pasta to the skillet. Toss well, adding reserved pasta water if needed to loosen the sauce.
- Season with salt and pepper to taste.
- Serve warm, garnished with parsley.
