🌱 Creamy Spinach & Mushroom Pasta – Comfort in Every Bite

Introduction:
This creamy spinach and mushroom pasta is rich, satisfying, and quick to prepare — perfect for a weekday dinner or a special weekend meal. With earthy mushrooms, fresh spinach, and a velvety sauce, it’s a vegetarian dish that tastes luxurious but is surprisingly easy to make.

Ingredients:

  • 250 g (9 oz) pasta (penne or fettuccine work well)
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 200 g (7 oz) mushrooms, sliced (button or cremini)
  • 150 g (5 oz) fresh spinach leaves
  • 200 ml (¾ cup) heavy cream or plant-based cream
  • 50 g (½ cup) grated Parmesan or vegan cheese alternative
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta in salted boiling water according to package directions. Drain, reserving ½ cup of pasta water.
  2. Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  3. Add mushrooms and cook until golden brown, about 5–7 minutes.
  4. Stir in spinach and cook until wilted.
  5. Make the sauce: Lower heat, pour in cream, and stir in oregano and cheese. Simmer for 3–4 minutes.
  6. Add the cooked pasta to the skillet. Toss well, adding reserved pasta water if needed to loosen the sauce.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with parsley.

Serving Tip: Pair this dish with warm garlic bread and a fresh green salad for a complete, comforting meal.
