- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped
For the Lemon Herb Rice:
- 1 cup long-grain rice
- 2 cups chicken or vegetable broth
- 1 tbsp olive oil
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
- Salt to taste
👩🍳 Instructions
1. Cook the rice
- In a medium pot, heat olive oil over medium heat.
- Add rice and toast lightly for 1–2 minutes.
- Pour in broth, bring to a boil, then reduce heat, cover, and cook for about 15 minutes until the liquid is absorbed.
- Stir in lemon zest, lemon juice, parsley, and a pinch of salt. Keep warm.
2. Prepare the shrimp
- Pat shrimp dry with paper towels. Season with paprika, salt, and pepper.
