🍛 Spicy Coconut Lentil Stew

A warm, comforting, and protein-packed vegetarian dish with bold flavors and a creamy finish.

🥣 Ingredients:

  • 1 cup red lentils (rinsed)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 tomato (chopped)
  • 1 can (400ml) coconut milk
  • 2 cups vegetable broth or water
  • 1 tsp curry powder
  • ½ tsp chili flakes (optional)
  • 1 tsp turmeric
  • Salt and pepper to taste
  • 1 tbsp oil (coconut or vegetable)
  • Fresh cilantro or green onions (for garnish)
  • Serve with rice, flatbread, or on its own

👨‍🍳 Instructions:

  1. Heat oil in a pot. Sauté onion, garlic, and ginger for 3–4 minutes until soft.
  2. Add chopped tomato and cook until it breaks down (about 5 minutes).
  3. Stir in curry powder, turmeric, and chili flakes. Cook for 1 minute to release flavors.
  4. Add lentils, coconut milk, and broth. Stir well.
  5. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes until lentils are soft and stew is thick.
  6. Season with salt and pepper. Garnish and serve hot!
