🍛 Spicy Coconut Lentil Stew
A warm, comforting, and protein-packed vegetarian dish with bold flavors and a creamy finish.
🥣 Ingredients:
- 1 cup red lentils (rinsed)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 1 tomato (chopped)
- 1 can (400ml) coconut milk
- 2 cups vegetable broth or water
- 1 tsp curry powder
- ½ tsp chili flakes (optional)
- 1 tsp turmeric
- Salt and pepper to taste
- 1 tbsp oil (coconut or vegetable)
- Fresh cilantro or green onions (for garnish)
- Serve with rice, flatbread, or on its own
👨🍳 Instructions:
- Heat oil in a pot. Sauté onion, garlic, and ginger for 3–4 minutes until soft.
- Add chopped tomato and cook until it breaks down (about 5 minutes).
- Stir in curry powder, turmeric, and chili flakes. Cook for 1 minute to release flavors.
- Add lentils, coconut milk, and broth. Stir well.
- Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes until lentils are soft and stew is thick.
- Season with salt and pepper. Garnish and serve hot!
