🥗 Mediterranean Quinoa Bowl

A fresh, vibrant, and protein-rich dish packed with veggies and bold flavors — great for lunch or a light dinner.

🌾 Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • 1 cup canned chickpeas (drained and rinsed)
  • ½ cup crumbled feta cheese (optional)
  • ¼ cup black olives (sliced)
  • Fresh parsley or mint (chopped, for garnish)

🫒 For the dressing:

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1 garlic clove (minced)
  • ½ tsp dried oregano
  • Salt and black pepper to taste

👨‍🍳 Instructions:

  1. Cook quinoa: Rinse quinoa under cold water. In a saucepan, combine quinoa with water or broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and let cool.
  2. In a large bowl, combine cooked quinoa, tomatoes, cucumber, onion, chickpeas, olives, and feta.
  3. In a small bowl, whisk all dressing ingredients together.
  4. Pour dressing over quinoa mix and toss well.
  5. Garnish with chopped herbs and serve chilled or at room temperature.
