🥗 Mediterranean Quinoa Bowl
A fresh, vibrant, and protein-rich dish packed with veggies and bold flavors — great for lunch or a light dinner.
🌾 Ingredients:
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- 1 cup canned chickpeas (drained and rinsed)
- ½ cup crumbled feta cheese (optional)
- ¼ cup black olives (sliced)
- Fresh parsley or mint (chopped, for garnish)
🫒 For the dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp red wine vinegar
- 1 garlic clove (minced)
- ½ tsp dried oregano
- Salt and black pepper to taste
👨🍳 Instructions:
- Cook quinoa: Rinse quinoa under cold water. In a saucepan, combine quinoa with water or broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and let cool.
- In a large bowl, combine cooked quinoa, tomatoes, cucumber, onion, chickpeas, olives, and feta.
- In a small bowl, whisk all dressing ingredients together.
- Pour dressing over quinoa mix and toss well.
- Garnish with chopped herbs and serve chilled or at room temperature.
