🍲 Beef and Plantain Stew
A rich and comforting West African-inspired dish that’s both savory and slightly sweet.
🥩 Ingredients:
- 500g beef (stew cuts), chopped
- 2 ripe plantains (peeled and sliced into chunks)
- 2 medium tomatoes (blended or chopped)
- 1 onion (chopped)
- 1 red bell pepper (blended or chopped)
- 2 garlic cloves (minced)
- 1 tsp ground ginger
- 1 tsp curry powder
- 1 seasoning cube or bouillon
- Salt and black pepper (to taste)
- 2 tbsp palm oil or vegetable oil
- 3 cups water or beef stock
- Fresh parsley or scent leaf (optional, for garnish)
👨🍳 Instructions:
- Season beef with salt, pepper, and half the ginger. Let it sit for 10 minutes.
- In a pot, heat oil and brown the beef pieces. Remove and set aside.
- In the same pot, sauté onion, garlic, and remaining ginger until fragrant.
- Add blended tomatoes and bell pepper. Cook down for 10–15 minutes, stirring.
- Return beef to the pot, add curry powder, seasoning cube, and water or stock. Let simmer for 30 minutes or until meat is tender.
- Add plantain chunks and cook for another 15 minutes until soft.
- Adjust salt and serve hot. Garnish with fresh herbs if desired.
