🍲 Chicken Coconut Curry with Rice
📝 Ingredients (Serves 4):
- 500g chicken breast or thighs, cut into cubes
- 1 can (400ml) coconut milk
- 2 tablespoons curry powder
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon vegetable oil
- 1 teaspoon turmeric (optional)
- Salt and pepper to taste
- Fresh coriander or parsley for garnish
- 1 cup basmati rice
🍳 Instructions:
- Cook the rice according to package instructions. Set aside and keep warm.
- In a large pan, heat oil over medium heat. Add chopped onion, garlic, and ginger. Sauté until fragrant (about 3 minutes).
- Add the chicken pieces, season with salt, pepper, curry powder, and turmeric. Cook until the chicken is browned on all sides.
- Pour in the coconut milk. Stir well and bring to a gentle simmer. Cover and let cook for 15–20 minutes until the chicken is tender and the sauce thickens.
- Taste and adjust seasoning if needed.
- Serve hot over rice, and garnish with fresh coriander.
