🍲 Chicken Coconut Curry with Rice

📝 Ingredients (Serves 4):

  • 500g chicken breast or thighs, cut into cubes
  • 1 can (400ml) coconut milk
  • 2 tablespoons curry powder
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon vegetable oil
  • 1 teaspoon turmeric (optional)
  • Salt and pepper to taste
  • Fresh coriander or parsley for garnish
  • 1 cup basmati rice

🍳 Instructions:

  1. Cook the rice according to package instructions. Set aside and keep warm.
  2. In a large pan, heat oil over medium heat. Add chopped onion, garlic, and ginger. Sauté until fragrant (about 3 minutes).
  3. Add the chicken pieces, season with salt, pepper, curry powder, and turmeric. Cook until the chicken is browned on all sides.
  4. Pour in the coconut milk. Stir well and bring to a gentle simmer. Cover and let cook for 15–20 minutes until the chicken is tender and the sauce thickens.
  5. Taste and adjust seasoning if needed.
  6. Serve hot over rice, and garnish with fresh coriander.

🍽️ Serving Tip:

Serve with warm naan bread or a side of sautéed spinach for a wholesome meal.
