🥗 Chickpea & Avocado Salad with Lemon-Tahini Dressing

Ingredients:

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1 small cucumber, chopped
  • 10 cherry tomatoes, halved
  • ¼ red onion, finely sliced
  • 2 tbsp fresh parsley or coriander, chopped

For the Dressing:

  • 2 tbsp tahini
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • 1 tsp maple syrup or honey
  • Salt and black pepper to taste
  • Water to thin (as needed)

Instructions:

  1. Prepare the Salad
    In a large bowl, combine chickpeas, avocado, cucumber, cherry tomatoes, red onion, and herbs.
  2. Make the Dressing
    In a small bowl, whisk together tahini, lemon juice, olive oil, and maple syrup or honey. Add water slowly until it’s a creamy drizzle consistency. Season with salt and pepper.
  3. Toss & Serve
    Pour the dressing over the salad and toss gently. Serve immediately as a main or a side dish.

No cooking needed. Fresh, protein-packed, and ready in 10 minutes.
