🥗 Chickpea & Avocado Salad with Lemon-Tahini Dressing
Ingredients:
- 1 can (400g) chickpeas, drained and rinsed
- 1 ripe avocado, diced
- 1 small cucumber, chopped
- 10 cherry tomatoes, halved
- ¼ red onion, finely sliced
- 2 tbsp fresh parsley or coriander, chopped
For the Dressing:
- 2 tbsp tahini
- Juice of 1 lemon
- 1 tbsp olive oil
- 1 tsp maple syrup or honey
- Salt and black pepper to taste
- Water to thin (as needed)
Instructions:
- Prepare the Salad
In a large bowl, combine chickpeas, avocado, cucumber, cherry tomatoes, red onion, and herbs. - Make the Dressing
In a small bowl, whisk together tahini, lemon juice, olive oil, and maple syrup or honey. Add water slowly until it’s a creamy drizzle consistency. Season with salt and pepper. - Toss & Serve
Pour the dressing over the salad and toss gently. Serve immediately as a main or a side dish.
