Grilled Lemon Garlic Sea Bass with Herbed Couscous
Ingredients:
For the Sea Bass:
- 2 sea bass fillets
- 2 tablespoons olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
For the Couscous:
- 1 cup couscous
- 1 ¼ cups vegetable or chicken broth (hot)
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh herbs (mint, parsley, basil)
- Salt and pepper to taste
- Zest of half a lemon
Instructions:
1. Marinate the Fish:
In a bowl, mix olive oil, lemon juice, minced garlic, salt, and pepper. Rub this over the sea bass fillets and let them marinate for 15–20 minutes.
2. Prepare the Couscous:
Place couscous in a bowl. Pour the hot broth over it, cover, and let it steam for 5 minutes. Fluff with a fork, add olive oil, herbs, lemon zest, salt, and pepper. Mix well.
3. Grill the Sea Bass:
Heat a grill pan or skillet over medium-high heat. Cook the fillets for about 3–4 minutes per side, depending on thickness, until the fish is opaque and flakes easily.
4. Serve:
Plate the herbed couscous, top with grilled sea bass, and garnish with fresh parsley and lemon wedges.
Serving Suggestion:
Pair with a chilled glass of white wine or lemon-infused sparkling water. Great for lunch or light dinner.
