Exotic Moroccan Lamb Tagine with Apricots & Almonds.

🍖 Moroccan Lamb Tagine with Apricots and Almonds

🛒 Ingredients:

  • 600g lamb shoulder, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon paprika
  • Salt and freshly ground black pepper
  • 400ml beef or chicken stock
  • 100g dried apricots
  • 2 tablespoons honey
  • 50g toasted almonds
  • Fresh coriander or parsley, chopped (for garnish)

👨‍🍳 Instructions:

1. Brown the Lamb
Heat olive oil in a large pot or tagine dish over medium-high heat. Add lamb pieces and sear until browned on all sides. Remove and set aside.

2. Cook the Aromatics
In the same pan, reduce the heat. Add chopped onion and sauté until soft and translucent. Stir in garlic and all the spices — cinnamon, cumin, coriander, turmeric, and paprika. Cook for 1–2 minutes until aromatic.

3. Simmer the Tagine
Return the browned lamb to the pot. Pour in the stock and bring to a boil. Reduce the heat to low, cover, and simmer gently for 45 minutes.

4. Add the Sweetness
Stir in dried apricots and honey. Continue to simmer uncovered for 20–25 minutes, allowing the sauce to thicken and the lamb to become meltingly tender.

5. Finish and Serve
Sprinkle with toasted almonds and garnish with fresh herbs. Serve hot with couscous or warm flatbread for a truly authentic Moroccan meal.
