500g firm white fish fillets (like cod, snapper, or tilapia), cut into chunks
1 tablespoon oil (coconut or vegetable)
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1 red chili, sliced (adjust to heat preference)
1 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon curry powder
400ml coconut milk
Juice of 1 lime
Salt to taste
Fresh cilantro (coriander leaves), chopped
🍳 Instructions:
