🛒 Ingredients:

  • 6 chicken thighs (bone-in, skin-on)
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp paprika
  • 1 can (400ml) coconut milk
  • 1 cup chicken broth
  • Salt & pepper to taste
  • Fresh cilantro (for garnish)
  • Cooked rice (for serving)

  1. Season chicken thighs with salt and pepper.
  2. In a large skillet or pot, heat oil over medium heat. Sear chicken on both sides until golden brown. Set aside.
  3. In the same pan, sauté onion, garlic, and ginger until fragrant (about 3 minutes).
  4. Stir in curry powder and paprika. Let it toast slightly for a deeper flavor.
  5. Pour in coconut milk and chicken broth, stirring to combine.
  6. Return chicken to the pan, cover, and let simmer for 30 minutes.
  7. Uncover and continue to simmer for 10 minutes to reduce the sauce.
  8. Garnish with fresh cilantro and serve hot over rice.

🛒 Ingredients:

  • 4 large bell peppers (any color), tops removed, seeds cleaned
  • 1 cup cooked quinoa
  • 1 can (400g) black beans, rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt & pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh parsley or cilantro (for garnish)

👩‍🍳 Instructions:

  1. Preheat your oven to 190°C (375°F).
  2. In a bowl, combine cooked quinoa, black beans, corn, tomatoes, cumin, chili powder, salt, and pepper.
  3. Fill each bell pepper with the mixture and place them in a baking dish.
  4. Top with shredded cheese if using.
  5. Add a splash of water to the baking dish and cover with foil.
  6. Bake for 30 minutes, then remove the foil and bake another 10 minutes.
