🍽️ Recipe of the Day: Coconut Curry Chicken or Beef
This rich and flavorful Coconut Curry can be made with either chicken or beef—your choice! Perfect for a hearty dinner, this dish brings a touch of the tropics to your table with creamy coconut milk and warm spices.
📝 Ingredients:
(Serves 4–6)
- 500g chicken breast or beef (cut into bite-size pieces)
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp chili flakes (optional, for heat)
- 400ml coconut milk (1 can)
- 1 cup chicken or beef broth
- 1 medium tomato, diced
- Salt & pepper to taste
- Fresh coriander (cilantro) for garnish
- Cooked rice or naan bread to serve
👨🍳 Instructions:
- Heat oil in a large skillet or pot over medium heat. Add onions and sauté until translucent.
- Add garlic and ginger, stir for 1 minute until fragrant.
- Add curry powder, turmeric, paprika, and chili flakes. Cook spices for 30 seconds.
- Add chicken or beef pieces. Cook until browned on all sides.
- Stir in diced tomato, then pour in the coconut milk and broth.
- Reduce heat and simmer for 20–25 minutes (for chicken) or 40–50 minutes (for beef) until meat is tender and sauce thickens.
- Season with salt and pepper to taste.
- Serve hot over rice or with warm naan. Garnish with fresh coriander.
