🍲 Today’s Recipe: Spicy Jollof Rice with Fried Plantain
Few dishes capture the heart of West African cooking like Jollof rice. Bold, colorful, and bursting with flavor, this classic recipe brings warmth and spice to any table. Paired with sweet fried plantains, it’s a comforting and satisfying meal for any day of the week.
🛒 Ingredients:
For the Jollof Rice:
- 2 cups long grain parboiled rice
- 1/4 cup vegetable oil
- 1 medium onion (sliced)
- 1 red bell pepper
- 2 large tomatoes
- 2 Scotch bonnet peppers (adjust to taste)
- 2 tbsp tomato paste
- 2 cups chicken stock (or water with seasoning)
- 1 tsp curry powder
- 1 tsp thyme
- 2 seasoning cubes
- Salt, to taste
For the Fried Plantain:
- 2 ripe plantains
- Vegetable oil, for frying
- A pinch of salt (optional)

Step 1: Prepare the Rice
- Rinse rice thoroughly in cold water until the water runs clear. Set aside.
Step 2: Make the Pepper Blend
- In a blender, blend tomatoes, bell pepper, and Scotch bonnet peppers into a smooth mixture.
Step 3: Cook the Base
- Heat oil in a large pot. Add sliced onions and fry for 2–3 minutes.
- Add tomato paste and fry until it darkens slightly.
- Pour in the blended pepper mix and cook for 10–15 minutes, stirring often until it thickens.
Step 4: Add Flavor
- Stir in curry powder, thyme, seasoning cubes, and salt.
- Add chicken stock and bring to a boil.
Step 5: Add Rice
- Pour in the washed rice and mix well. Reduce heat to low, cover, and cook for about 25–30 minutes. Stir occasionally to prevent burning.
Step 6: Fry the Plantains
- Peel and slice plantains into rounds or diagonally.
- Heat oil in a frying pan and fry until golden brown on both sides. Drain on paper towels and sprinkle with salt if desired.
